Nestled in the remote, misty mountains of Yabe Village, Fukuoka, the Chiyonoen Tea Garden is a hidden gem tended with care and dedication by Masashi and Eri Harashima, a husband-and-wife team who continue the legacy of Masashi’s grandfather, Chiyokichi. For three generations, the Chiyonoen farm has been a sanctuary of tradition and natural cultivation, specializing in high-grade mountain-grown sencha and gyokuro. This particular tea, a single-cultivar Yabukita black tea from the spring harvest, captures the soul of these mountains.
Handcrafted without chemical fertilizers or pesticides, the tea is an expression of the pristine environment it grows in. Its leaves, harvested during the first flush of spring, are carefully processed to create a tea that won the Grandprix award in 2020 for Domestic Japanese Black Tea. Known for its subtlety and soothing qualities, this black tea brings the essence of the mountains to your cup, offering a gentle, comforting brew perfect for moments of quiet reflection.
Butter scones with clotted cream and jam
The tea’s light, sweet, and fruity profile enhances the buttery richness of scones, while the jam’s sweetness complements the tea’s subtle stone fruit notes.
Mild cheeses like brie or camembert
The gentle tannins and smooth texture of the tea balance beautifully with soft, creamy cheeses, adding a touch of sweetness to each bite.
Fruit tart with almond cream
The tea’s nutty undertones pair excellently with almond-based desserts, and the tart’s fresh fruit toppings mirror the tea’s fruity nuances.
Vanilla panna cotta
The tea’s delicate notes of vanilla and honey are an elegant match for a smooth, creamy panna cotta, creating a sophisticated dessert pairing.
Lightly grilled white fish with lemon butter sauce
The tea’s subtle, mineral finish complements the mild flavors of white fish, while the lemon butter sauce highlights the tea’s sweet, floral notes.
