Tea story
GABA white tea is a modern innovation rooted in ancient tradition. It begins like a classic white tea, harvested from tender buds and young leaves of heirloom varietals during the early spring. But from there, the path diverges.
Unlike traditional sun-drying, GABA tea undergoes a specialized fermentation process first developed in Japan in the 1980s. The fresh leaves are sealed inside stainless steel vacuum drums, where oxygen is replaced with nitrogen, creating an anaerobic environment. Over 8–10 hours, this oxygen-free setting triggers a natural transformation—elevating the leaves’ content of gamma-aminobutyric acid (GABA), a neurotransmitter known for promoting calm and focus.
Once fermentation is complete, the leaves are dried slowly at low temperatures to retain their softness and delicate aroma. The result is a rare hybrid: a white tea with the calming benefits of GABA and a layered flavor more structured than typical silver needle or white peony teas.
This GABA white is not made for rush or distraction. It’s a tea of quiet moments—of misty mornings, study breaks, and evenings where the body needs grounding. The cup is gentle, but not simple.
