Tea story

Huangshan Maofeng, often called Furry Peak, is a prestigious green tea hailing from the mist-covered peaks of Huangshan in Anhui Province, China. The tea gets its name from the unique, fuzz-covered buds that are carefully handpicked from tea bushes grown in the mountainous region. This tea has a long history and is considered one of the finest green teas in China, often reserved for important occasions and ceremonial use. Grown at high altitudes, the tea plants are exposed to the misty conditions of the mountains, which contribute to their slower growth and the development of complex flavors.

The production of Huangshan Maofeng is meticulous and follows traditional methods. The tea leaves are plucked early in the spring, when the leaves are tender and the buds are still covered in fine, silvery hairs. After being handpicked, the leaves undergo a gentle, pan-frying process, which helps preserve the fresh, green flavors and the tea’s signature brothy richness. The slow, careful drying ensures the leaves maintain their delicate structure, which, when steeped, releases a balanced and complex cup.

The light, delicate fish pairs wonderfully with the green tea's fresh, vegetal notes, while the citrusy lemon and aromatic dill bring out the tea’s clean and refreshing finish.
