One bud, one leaf
The journey of LuShan YunWu tea begins with the early morning harvest, when the cool air preserves the freshness of the leaves. The fresh leaves are then carefully processed through a series of meticulous steps: they are lightly pan-fired to halt oxidation, resulting in a vibrant, green leaf that maintains its delicate flavor. This is followed by hand-shaking to reduce moisture and preserve the leaf's structure, then rolling to shape the leaves and bring out their characteristic needle-like form. Finally, the tea undergoes precise drying stages to lock in its flavor and aroma.
The tea in grown high in the misty mountains of Jiangxi Province. Lu Shan Yun Wu, meaning "Cloud Mist," draws its name from the ethereal fog that envelops the tea gardens, creating the perfect environment for this revered green tea. This tea is harvested from a family-run farm that has upheld time-honored techniques, ensuring each leaf captures the essence of its high-altitude origin.
Sushi and sashimi
The tea’s vegetal sweetness and umami notes beautifully complement the delicate flavors of sushi and sashimi, enhancing the freshness of the fish.
Steamed white fish
Lightly seasoned steamed white fish, such as cod or tilapia, pairs well with the tea’s creamy texture and vegetal undertones, highlighting the subtle flavors of the fish.
Green salads
Fresh salads with ingredients like asparagus, peas, and baby spinach resonate with the green, grassy notes of the tea, creating a harmonious and refreshing pairing.
Grilled vegetables
Lightly grilled vegetables, such as zucchini or bell peppers, with a touch of sea salt and olive oil, complement the tea’s umami and smooth mouthfeel.
Rice dishes
Mildly seasoned rice dishes, like a simple steamed jasmine rice or a rice bowl with sautéed vegetables, pair well with the tea’s creamy texture and vegetal sweetness.
Lightly seared chicken
A dish of lightly seared chicken with a touch of herbs and lemon pairs nicely, as the tea’s umami balances the flavors of the chicken and enhances the dish’s subtle seasoning.
