Cool and gently sweet, this is a slow cold brew for late summer afternoons. The apricot follows the tea’s rounded, honeyed character without turning it into a fruit drink.

WHAT YOU NEED
6 g Ginseng Oolong
1 L still filtered or bottled water
A few thin slices of ripe apricot
Ice
Optional: a small splash of sparkling water

HOW TO MAKE IT
1. Add the tea to 1 L of cold water.
2. Cover and refrigerate for 6–8 hours.
3. Strain the leaves completely.
4. Add a few thin slices of apricot and let them sit in the tea for a few minutes.
5. Fill glasses with ice and pour the tea over.
6. For a lighter, longer drink, finish with a small splash of sparkling water.

BESIDE THE GLASS
Serve with salty cheese, green olives, ripe tomatoes or a simple summer lunch. The salt makes the soft sweetness of the oolong and apricot feel even clearer.

SERVING NOTE
Keep the fruit restrained. The drink should still taste first of Ginseng Oolong: cool, rounded and gently sweet.
