Crisp, green and lightly nutty, this is Dragon Well made colder rather than louder. Cucumber keeps the drink fresh and savory; lemon peel adds aroma without turning the cup into lemonade.
WHAT YOU NEED
6 g Dragon Well
350 ml filtered water at 80°C
Ice
A few cucumber ribbons
1 strip of lemon peel
HOW TO MAKE IT
1. Brew 6 g Dragon Well in 350 ml water at 80°C for 2 minutes.
2. Fill a serving jug or two glasses generously with ice.
3. Strain the hot tea directly over the ice to chill it quickly.
4. Add a few thin cucumber ribbons.
5. Twist a strip of lemon peel over the drink to release its oils, then add it to the glass.
6. Serve immediately while the tea is bright and fresh.
BESIDE THE GLASS
Try it with fresh goat cheese, salted almonds, cucumber salad or a simple plate of tomatoes and olive oil. Keep the food clean and savory rather than sweet.
SERVING NOTE
Use lemon peel, not lemon juice. Acidity would pull the drink away from the soft chestnut and green notes that make Dragon Well distinctive.
