Sparkling Rooibos Earl Grey with orange

Bright with bergamot and orange peel, this is a caffeine-free sparkling tea for the part of the day when you want something cold and grown-up without another caffeinated cup.

WHAT YOU NEED
8 g Rooibos Earl Grey
300 ml boiling water
Ice
Chilled sparkling water
2 strips of orange peel 

HOW TO MAKE IT
1. Brew 8 g Rooibos Earl Grey in 300 ml boiling water for 7 minutes.
2. Strain and let the tea cool completely. Refrigerate until cold if preparing ahead.
3. Fill two glasses with ice.
4. Divide the chilled tea between the glasses.
5. Top each with sparkling water to taste.
6. Twist a strip of orange peel over each glass to release the oils, then drop it in.

BESIDE THE GLASS
Serve with toasted nuts, a little dark chocolate, citrusy cake or simply on its own at the end of the afternoon. Bergamot and orange already give the drink enough aromatic sweetness.

SERVING NOTE
Do not sweeten by default. Taste it first: rooibos has its own natural roundness, and the aim is a dry, refreshing spritz rather than a soft drink.
