WHAT YOU NEED
2 g MATCHA Ceremonial blend #1
50 ml filtered water at 75°C
60 ml white peach juice
90 ml chilled sparkling water

HOW TO MAKE IT
1. Fill a tall glass generously with ice.
2. Pour in 60 ml white peach juice.
3. Add 90 ml sparkling water slowly so the bubbles stay lively.
4. In a separate bowl, sift 2 g matcha if needed.
5. Add 50 ml water at 75°C and whisk until smooth and lightly foamy.
6. Pour the matcha slowly over the back of a spoon or directly over the ice to create a soft layered effect.
7. Serve immediately and stir before drinking if you want the flavors fully combined.
BESIDE THE GLASS
Serve with fresh peach, a plain butter biscuit, almond cake or a lightly salted snack. Keep the pairing simple so the matcha still feels like the center of the drink.
SERVING NOTE
Use a white peach juice that tastes clean and not syrupy. This should feel like sparkling matcha with peach, not peach soda colored green.
