Tea story

High in the cloud-draped peaks of Nantou’s Alishan range, tea farmers cultivate tender leaves that thrive in mist and mineral-rich soil. This batch of GABA Alishan oolong was harvested in early autumn and made from the Qingxin cultivar—known for its floral complexity and silky mouthfeel.

Once picked, the leaves were gently oxidized and then placed in a stainless steel chamber where oxygen was replaced with pure nitrogen. Over 8 hours, the leaves transformed: sugars deepened, amino acids converted into gamma-aminobutyric acid (GABA), and aromas mellowed. The result is a tea with a soothing physical effect, traditionally consumed in Taiwan and Japan for focus and relaxation.

Unlike greener high mountain oolongs, this tea carries a slight roast that warms its fruit-forward profile. Each infusion evolves from toasty baked pear to honeyed plum and sweet almond, offering a meditative experience in every cup.
