Tea Story

High in the cloud-draped peaks of Nantou’s Alishan range, tea farmers cultivate tender leaves that thrive in mist and mineral-rich soil. This batch of GABA Alishan oolong was harvested in early autumn and made from the Qingxin cultivar — known for its floral complexity and silky mouthfeel.

Once picked, the leaves were gently oxidized and then placed in a stainless steel chamber where oxygen was replaced with pure nitrogen. Over 8 hours, the leaves transformed: sugars deepened, amino acids converted into gamma-aminobutyric acid (GABA), and aromas mellowed. The result is a tea with a soothing physical effect, traditionally consumed in Taiwan and Japan for focus and relaxation.

Unlike greener high mountain oolongs, this tea carries a slight roast that warms its fruit-forward profile. Each infusion evolves from toasty baked pear to honeyed plum and sweet almond, offering a meditative experience in every cup.
