Tea Story

Oyaizu Tea began in Shizuoka in 1949 as a tea wholesaler. By the early 1960s, the family business had moved into tea refinement, working with leaves from Shizuoka’s Honyama and Kawane regions. Today, the third-generation factory continues to specialize in finishing and blending Japanese tea.

Barista Blend #1 is Oyaizu’s Yanagi matcha. Its name means “willow,” but the tea itself was developed with a practical purpose: to retain its color and flavor when mixed with milk.

Rather than expressing one cultivar or a single garden, Yanagi brings together first-flush tencha from Shizuoka, Kagoshima and other Japanese tea regions. The composition can be adjusted between productions to account for the natural differences between harvests. The intended character remains consistent: deep green color, a full matcha flavor and enough bitterness to stay distinct in a latte.

That structure matters when matcha is prepared with dairy or plant-based milk. Milk softens the tea’s sharper edges, so a very delicate matcha can easily disappear. Here, the bitterness gives the drink definition, while mild-to-medium umami keeps it rounded.

The tencha is ground using ceramic beads inside a cooled milling system. This allows Oyaizu to produce a fine, smooth powder at a higher capacity while controlling the temperature during grinding.

Prepared with water, this matcha is direct, green and noticeably bitter. Add milk and the texture becomes softer, while the tea flavor remains clear. It is especially well suited to oat milk, iced matcha and drinks with a small amount of syrup or fruit.
