Tea Story

This matcha is a through blend of several cultivars is made from spring-harvested tea grown in Kagoshima without pesticides or synthetic fertilisers. Before the harvest, the plants are shaded for three to four weeks, filtering the sunlight and encouraging the amino acids responsible for matcha’s deep umami and natural sweetness.

Once picked, the leaves are steamed and dried as tencha: the delicate, unrolled tea used to make matcha. Selected tencha lots are combined to balance their color, aroma, texture and flavor. This careful blending gives the matcha its rounded character and allows the profile to remain consistent from one harvest to the next.

The refined tencha is slowly ground between stone mills into a fine, vivid green powder. Whisked with water, it opens with generous umami and fresh vegetal notes, followed by mild sweetness and a soft green bitterness. The texture is creamy and smooth, with little astringency and a clean, settled finish.

Its gentle balance makes Ceremonial Blend #1 especially pleasant to drink straight and easy to return to as an everyday matcha.
