Tea Story

This matcha comes from Kagoshima, at the southern end of Japan’s island of Kyushu. The region’s warm climate and long growing season have made it one of the country’s most important areas for Japanese green tea.

Matcha Okumidori is made from one cultivar only. Okumidori is known for its vivid green color and smooth, rounded character. Working with a single cultivar keeps that identity clear in the finished matcha, from its creamy texture to the gentle sweetness beneath its umami.

The tea plants are shaded for three to four weeks before the spring harvest. Limiting direct sunlight deepens the green color of the leaves and preserves more of the amino acids responsible for matcha’s savory flavor. This crop is grown without pesticides or synthetic fertilizers.

After harvesting, the leaves are steamed and dried as tencha, the leaf material used to make matcha. They are then refined and ground into a fine powder using a ball mill.

In the cup, the matcha begins smooth and creamy, with medium umami and a mild natural sweetness. A fresh green bitterness follows, giving the finish clarity without making it feel dry or sharp. Prepared with water, it is clean and balanced; in milk, its green depth and refreshing edge remain present.
