Tea Story

Honyama lies in the mountains above Shizuoka City, along the upper reaches of the Abe and Warashina rivers. Tea has been cultivated here for centuries, on slopes shaped by mineral-rich soil, mountain water and mist rising from the river valleys.

The fog settles over the gardens in the morning and evening, softening the sunlight and helping the leaves grow slowly. Large differences between daytime and nighttime temperatures give Honyama teas their characteristic combination of clear fragrance, gentle sweetness and a fresh, lingering finish.

Honyama Tea has worked in this region since 1916. The family-run factory sources from established local growers and continues a much older Honyama tea tradition while developing matcha suited to contemporary production.

This matcha is made entirely from Saemidori. The cultivar’s name translates as “clear green,” referring to the particularly bright color of its leaves. It is valued for its natural sweetness, vivid appearance and rounded umami. Keeping the matcha single-cultivar allows this character to remain distinct in the finished cup.

The plants are shaded for four weeks before the spring harvest. Reduced sunlight encourages the leaves to retain more of the amino acids responsible for matcha’s umami and sweetness. The crop is grown without pesticides or chemical fertilisers.

After harvesting, the leaves are steamed and dried without rolling to produce tencha. Stems and larger veins are removed before the refined leaf is ground into a fine powder using a bead mill.

Whisked with water, Saemidori begins with a fresh vegetal aroma and medium savory depth. Gentle sweetness develops through the middle of the cup, followed by a firmer green bitterness than softer ceremonial matcha. The finish is clean and refreshing, giving the tea a clear sense of structure without excessive heaviness.
