This GABA-enriched Tie Guan Yin hails from Anxi, Fujian — a region steeped in oolong history and home to the revered Iron Goddess varietal. Unlike the greener, floral style of modern Tie Guan Yin, this version undergoes a traditional medium roast, giving it a warm, toasty profile before it takes on a modern twist.

In a quiet workshop outside Anxi, freshly picked leaves are allowed to oxidize in a sealed, nitrogen-rich chamber — an oxygen-free environment originally developed by Japanese researchers to increase gamma-aminobutyric acid (GABA) content in food. The result is a uniquely calming oolong that maintains the complexity of its varietal heritage while delivering a soft, fruity sweetness.

As the infusions unfold, the baked fruit notes become more pronounced, and the texture grows silkier. This is a tea that rewards patience and quiet brewing, ideal for evenings or moments of reset.
