A soft white tea served cold with ripe nectarine and a very small amount of thyme. The fruit supports the tea’s natural sweetness while the herb adds a light aromatic finish.
WHAT YOU NEED
5 g white tea
400 ml filtered water at 85°C
Ice
A few thin slices of ripe nectarine
1 small sprig of thyme
HOW TO MAKE IT
1. Brew the tea in 400 ml water at 85°C for 3 minutes.
2. Fill a jug or serving glasses with ice.
3. Strain the tea over the ice to cool it quickly.
4. Add the nectarine slices and thyme.
5. Leave for 8–10 minutes.
6. Remove the thyme.
7. Serve cold in two or three glasses.
BESIDE THE GLASS
Serve with soft cheese, fresh stone fruit, a simple almond biscuit or a light breakfast pastry. Keep the food delicate so the tea stays clear.
SERVING NOTE
Use the thyme lightly and remove it after 8–10 minutes. The finished drink should taste primarily of white tea, with nectarine and thyme as quiet supporting notes.
